| Chianti dei Colli Senesi DOCG |
Chianti Colli Senesi is the largest sub-division of the Chianti wine-making area, stretching in a line from San Gimignano to Colle di Val d'Elsa, Siena, and extending south as far as Montalcino and Montepulciano.
The red wine made here is a young, vintage wine, which is a perfect accompaniment to cold meats (prerably made from Cinta Senese) and bruschetta.
It is ideal with soups made with bread, with pasta and mushroom or game sauce, as well as ribollita, tripe, grilled pork meat, and roast meat in general. It is also ideal with semi-mature, but not fresh cheeses.
This Chianti is based on the Sangiovese (75-100%) grape, and the Canaiolo Nero (max 10%), as well as Trebbiano Toscano and Malvasia del Chianti, individually or together (max 10%).
Only a few other, strictly local grape varieties may be added to these grapes (max 10%).
With its more or less intense ruby-red colour, its strong bouquet, sometimes reminiscent of violets, Chianti Colli Senesi DOCG is aromatic, dry, strong-flavoured and frisky to the palate, with a minimum alcohol content of 11.5% vol.
The glass best suited for drinking this wine has a round base which becomes cylindrical at the top, so as to attain an optimum exchange between the wine and the oxygen in the surrounding air.
This enhances the young and fruity flavours, at the same time attenuating any aggressive nuances, typical of the young age of this wine.
